Clara has over 40 years of healthcare foodservice management experience in North America and Asia. She pioneered cook chill central food production, as well as the first to design Foodservice management computer systems in Canada, Hong Kong, Taiwan and China.
In 2010, Clara was the first in Hong Kong to instigate “Meatless Monday” in hospital settings to promote healthy low carbon diets. In 2011, Clara was the first in Asia to implement “Balanced Menus” as recommended by Healthcare Without Harm (HCWH) under WHO, to achieve carbon emission savings, plus promoting health and disease prevention through reduction of meat on hospital menus, mitigate climate change, improved client satisfaction and combat against rising food cost.
In 2018, Clara was inducted into the FCSI Council of Fellows, which recognizes extraordinary contributions. At present, Clara continuous to promote plant based nutrition worldwide.
